Pumpkin Whoopie Pies

For anyone who wants a delicious fall desert here is the recipe:

1 1/2 cup brown sugar
3/4 cup canola oil
1 1/2 tsp vanilla
2 eggs
1 (15oz) can of pumpkin puree

3 cups flour
1tsp baking powder
1 tsp baking soda
1/2 tsp salt
3/4 tsp cinnamon
1/4 tsp ground cloves

Preheat oven to 350. 
Mix together with a mixer-brown sugar, oil, and vanilla.  Add eggs one at a time.  Add pumpkin.
In a separate bowl mix flour and the rest of the ingredients.  Add 1/2 of dry mixture to wet mixture and mix.  Then add the other half.  Put spoonfuls onto cookie sheet and cook 11-13 minutes (depending on how big you make them.  I make them small so they are bite sized about a teaspoon drop and only cook them for 81/2 minutes.)

For the filling you can use any whoopie pie filling.  I just use the one from mom.  Watch out you may get addicted.  I made some more today for a football thing that Jon is going to tomorrow.  Any excuse I can get to have a couple and then send the majority somewhere else.
